-3/4 cup raw, organic cashews (they need to be in their raw form)
-1/2 cup water (the dressing will thicken as it chills. You may want to add more if you want a thinner dressing for salad. Can add less if you want it to be thicker to use as a dip or spread)
-1 tsp apple cider vinegar
juice from 1/2 lemon
-1/2 tsp sea salt
-2 tbsp fresh chopped herbs (I used dill and parsley but it's up to you- use a few different kinds for the best flavour!)
-1 clove garlic, roughly chopped
-add cashews to a deep bowl and cover with water. Soak for 6-8 hours.
-discard the soaking water and add cashews to a blender or food processor. Add water, ACV, lemon juice and sea salt. Blend/puree until smooth.
-scrape down the sides and add in the garlic and herbs. Blend/puree on high until everything is pureed and the dressing is smooth. Store in an airtight container in the fridge for up to 7 days. Enjoy!

Making salad dressings from scratch is one of the easiest things you can do, and let me tell you, it's 100% better than any store bought version. I'm often asked to make salads for my family dinners and things, and the star is always the dressing. I'll tell you the secret for making great salad dressings- use good quality ingredients. When you combine great tasting, quality ingredients, you get a delicious final product. It's that simple.
I can't say enough about the benefits of making your food from scratch. As a general rule, if I can make it myself from scratch, I'll do it. Making your food from home is the only way to control exactly what ingredients are used and how it is prepared. Many of them are loaded with salt and sugar and they often contain food colourings and added chemical flavourings. Yuck. These dressings lack nutritional value and they are certainly not worth the money you will spend on them. Invest in a couple different, good quality, oils and vinegars and you'll be able to create nourishing dressings for yourself and your family to enjoy.
