herby balsamic marinated turkey
2 turkey breasts (about 1 ½ pounds of meat)
¼ cup balsamic vinegar
¼ cup orange juice
½ cup olive oil
1 tbsp Dijon mustard
1 garlic clove, minced
2 tsp each: dried rosemary, dried basil and dried oregano (feel free to use any combination of herbs and spices you want!)
½ tsp sea salt
¼ tsp black pepper
In a small bowl, combine the balsamic vinegar, olive oil, Dijon mustard, garlic clove, dried herbs, salt and pepper; whisk well to combine.
Place the turkey breasts in large Ziploc bag and pour marinade over top. Seal the bag and use your hands to gently massage the marinade on the turkey breasts. Place turkey in the fridge to marinade for at least one hour (though the longer it marinades, the better!)
Preheat your barbeque to 400F; once hot, turn the heat down to medium before placing the turkey breasts on the grill. Grill for 10-12 minutes before flipping and cooking on the other side for another 10-12 minutes. Be sure the internal temperature reaches 165F before removing from the heat.
Let turkey sit for about 5 minutes before serving.
