quinoa tabouleh salad




-1/2 cup cooked quinoa

-1/2 cup halved cherry tomatoes

-1/2 cup chopped cucumbers

-2 tbsp chopped parsley

-2 tbsp chopped mint (you could also use fresh dill)

-1 tbsp fresh lemon juice

-1 tbsp olive oil

-s & p to taste

-add all ingredients to a bowl and mix well

-for the best flavour, make this salad ahead of time! Refrigerate for 30 minutes to let everything hang out and the flavours will intensify!
