turkey caesar stuffed sweet potatoes



  • 1 pound ground turkey

  • 3 medium sweet potatoes

  • 2 tsp avocado oil

  • ½ tsp sea salt

  • ¼ tsp black pepper

  • 3 garlic cloves, minced

  • ¼ cup vegetable stock

  • 2 tsp tamari

  • 2 cups shredded kale

caesar sauce

  • ¼ cup plain Greek yogurt

  • 1 tsp Dijon mustard

  • ½ tsp tamari

  • 1 tbsp nutritional yeast

  • 1 tbsp olive oil

  • ½ tsp garlic powder

  • ¼ tsp onion powder

  • ¼ tsp sea salt

  • ¼ tsp black pepper

  • Juice from ½ of a lemon

  • ¼ - ½ cup water for thinning

Tip: Save time by roasting the sweet potatoes ahead of time! Simply reheat in the oven while you prepare the rest of the ingredients.

  1. Preheat your oven to 375 F.

  2. Rinse and gently scrub the sweet potatoes. Dry them off with a towel and use a fork to pierce the potato on all sides. Rub a small amount of oil all over the potatoes then place on a baking sheet. Roast in the oven for 1 hour, or until the sweet potatoes are soft all the way through.

  3. While the sweet potatoes roast, prepare the turkey mixture. Heat a large cast iron pan over medium heat, add avocado oil and ground turkey. Season turkey with salt and pepper and cook until no pink remains, about 5-8 minutes. Once turkey is no longer pink, add the garlic and cook for a couple minutes, until fragrant.

  4. When the garlic has softened, add the vegetable stock, tamari and kale to the pan with the turkey. Use a spoon to scrape the pan while tossing the kale and turkey together. Sauté until kale is soft and wilted, about 3-4 minutes. Turn heat down to low to keep warm while the sweet potatoes finish roasting.

  5. Make the Caesar sauce: add all sauce ingredients (starting with ¼ cup water) to a small food processor or blender. Blend on high, until completely smooth. Add additional water, if necessary, to achieve desired consistency.

  6. Assemble the stuffed sweet potatoes by cutting the sweet potatoes down the middle, lengthwise; use a fork to lightly break up the inner potato. Spoon the turkey and kale mixture over top of each potato. Drizzle each potato with the Caesar sauce just before serving. Serve with additional Caesar sauce on the side!
